  • I'm not in the US but that doesn't stop me being thankful for many things.

My family has so far lost no-one to Covid, those of us old/still young enough to be working have all kept our jobs throughout this.

I won't be having Turkey and as the mrs is on shift tonight and doesn't finish till 8:30pm I'll probably have a pizza for supper but thankfully I like PIzza!

Have a great day and enjoy your Holiday!

    Oh, and FIRST! 🦃

  • Happy Thanksgiving to all our US Friends. Or Happy Gobble Gobble Day.

I am thankful for many many things. I am thankful for this community of bright, intelligent and helpful IT Professionals to help when my Google-Foo fails miserably (Or I get too lazy)

  • Happy Turkey Day!

I'm going to roast up a full/fresh ~9 lb turkey breast this year for a change (instead of a 15+ lb full bird).

Served with cranberry/lime salsa relish (jalapeno and habanero in there!). Have fresh Carolina Reapers on hand as well... don't think my guests would enjoy that much heat 😂

I'll post up the reslish recipe in Cooking with Spice a bit later.

Oh, and pictures because that sounds delicious!

I'm making a 16lb turkey but more because I like having hot turkey sandwiches (which is basically a turkey dinner made into a sandwich smothered in gravy) as leftovers :D Mine don't look quite this... excessive but it gives you a good idea as to what I mean:

  • Pork tenderloin here, with home-grown scalloped potatoes au gratin, stuffing, home-grown carrots, home-grown butternut squash, scratch-made rolls, salad, and gravy.

  • I'm thankful our offices in NewYork and Orlando are off today so it's just the UK users causing trouble (and for some reason they're mostly less trouble than the US!)

  • My wife and I went out to eat.  No kitchen cleanup and better yet, no leftovers, especially since I'm not a big turkey fan.

Every year it's always just been me and my kiddo, so we've either always been invited to others' houses and bring a side/dessert, or my stepmom would come down and cook, I've never had to cook my own turkey. But my stepmom is getting older, and since I'm 40 (shhh!) I figured it's time to learn how to make one myself - and it turned out soo good!

I said all that to tell ya'll that I made a 10lb turkey, a 8lb ham and all the sides just so I can have all the leftovers for hot turkey sandwiches, etc  :)
